Autumn '22 Newsletter

Welcome to our first Autumn Newsletter

THANK YOU TO ALL OUR GUESTS THAT CONTINUE TO RETURN YEAR AFTER YEAR....


October and November are the months when we catch up on the jobs that need doing; re-decorating, updating and essential maintenance. Doug is often found in the forest with his chainsaw chopping down fallen trees to replinish our stock of logs and making preparations for the winter. The weather continues to be warm and sunny so we are eating lunch outside and the area is busy with hikers and cyclists.


 Looking ahead, the high summer 2023 calendar is booking up quickly. If you have specific dates in mind do snap them up to avoid disappointment.


All our returning guests will receive the best possible rate, a welcome hamper filled with local produce from our trusted suppliers and a special delivery from Chateau Aydie!


ANY PLANS FOR THE WINTER?


 The first snow usually arrives in the final week of November and by mid December the ski season is in full swing.


The Alps may have the glamour but the smaller friendly resorts of the Hautes Pyrenees offer great opportunities for experienced skiers, children and beginners.   Amongst beautiful mountains known for downhill skiing, Nordic skiing and snowshoeing, the department has 439 ski runs and 340km of ski and cross-country trails - the most in the French Pyrenees.  At Les Hauts Pâturages we are around 45 - 60 minutes drive from several wonderful resorts.   During the winter months we also offer the option of bespoke catered winter breaks from a weekend jaunt to a 7 night stay- we do the driving, prepare fantastic food and wine, organise hire gear/lift pases etc whilst you enjoy the snow.


Although the Christmas New Year is booked we have availability from early January 2023!


RECIPES FROM THE KITCHEN


 Right now we are awash with seasonal produce! Apples, plums and a few late raspberries we still going strong, tomatoes are still plentiful. We have just finished the last of the aubergines but the butternut squash will be ready in a few weeks time along with the cabbage.


Our avenue of walnut trees are laden with nuts and mushrooms are popping up everywhere! We have attached a few of our favourite recipes from our Table d'hôte and events menus.
